Have you tried this stuff? It's the Santa Fe Chipotle soup mix from Bear Creek. My sister-in-law gave me a fun pack of various soup mixes for my birthday in December and we all fell in love! It's got great flavor-- not so spicy the kids won't eat it, but enough kick to keep it interesting. Also, the noodles.... who knew you could put pasta in a Mexican soup? They make it so yummy, and so kid friendly.
It's available at most local grocery stores, or you can order it online. We added pre-cooked chicken (thanks to the wonderful sale several months ago) and some frozen corn. You should give it a try!
